I’ve been on the keto diet for a long time. Whenever I decide to give myself a day off, I immediately think about ice cream.
This can create some strong cravings for ice cream. That’s why I am eating keto ice cream. It is simple to prepare, taste the same and can help with the keto diet.
Regular ice cream contains a lot of sugar and unhealthy ingredients. Plus, they may strengthen your cravings for sugar.
If you are one a keto diet you should stay away from regular ice cream, even on your “off days”.
Some packaged ice creams seem to be low-carb but they might contain some additional substances that can spike your blood sugar levels.

What Is Keto Ice Cream?
A keto ice cream is usually not different from the regular ice cream if you look at it or even when you taste it. The preparation can be the same too.
The difference is in the main ingredients.
Obviously, we won’t use sugar in keto ice cream. Instead, we will use a sugar-free sweetener such as allulose or erythritol.
The recipe is very low in carbs (3g net) and high in fats (36g), which makes it a great keto-friendly snack or dessert.
So, can you eat it everyday?
It actually depends on your goal from the diet. If you are looking to lose weight you have to stay away from snacks or desserts unless you are really hungry.
Also, try to track of your macros regularly in order to keep a calorie deficit.
Is Ice Cream Low-Carb?
Mostly, no. Ice cream is considered an unhealthy snack, which is actually true. It’s loaded with sugar, very low in protein, and can contain some unhealthy substances.
Don’t get me wrong, I’m not against Ice cream. In fact, if you want it you can go for it. You just have to make sure it’s not in excess.
On the other hand, when you make your own ice cream, you will know exactly what you put in it. So, as long as it’s possible to make low-carb ice cream, it’s better to do so.
How To Make It?
As mentioned before, the recipe is extremely easy and simple. It might take some time but that doesn’t deny the fact that you can do it even though you are not a kitchen person.
You just need butter, MCT oil, vanilla extract, heavy cream, and your favorite sugar-free sweetener. You may already have these ingredients if you make low-carb recipes on a regular basis.
If you have an ice cream make the process will be easier for you. You just have to mix the ingredients, put everything in the ice cream maker, and churn.
However, if you don’t have one don’t worry. The instructions on the card are specifically for you.
Do You Need MCT oil?
Also, it adds a lot to the texture of the ice cream if you are not using and ice cream maker. If you use one it’s not necessary to add MCT oil. But for the health benefits it provides I totally recommend it.
How To Store It?
The keto ice cream can be served immediately if you are using an ice cream maker. However, just like the regular ice cream, it’s better to freeze it for at least 2 hours.
Again, it’s different when you are not using an ice cream maker. In this case, you have to stir the mix regularly and freeze it for at least 6 hours.
Ice Cream Flavor
The recipe is still simple and the ingredients are still the same 5 mentioned above. But we didn’t specify the exact flavor you will get from this recipe.
This is basically a vanilla flavored ice cream. Obviously, because we used vanilla extract as one of the ingredients.
However, if you are not a fan of vanilla you can add the flavor that you want as long as it is low-carb.
Here are some flavor that can be added:
- Sugar-free Chocolate chips
- Sugar-free Caramel Syrup…
Keto Low-Carb Ice Cream
- Ice Cream Maker (optional)
- Sauce pan
- 2 cups Heavy cream
- 3 tbsp Butter Grass-fed, Unsweetened
- 1 tsp Vanilla extract
- 3 tbsp Sugar-free powdered sweetener Allulose or erythritol
- 1/4 cup MCT oil optional
- Melt butter in a large saucepan on a medium heat then add heavy cream and powdered sweetener. Mix and leave it until it boils. Then leave it for 30-50 minutes until it cools down. You will get a sugar-free condensed milk.
- Pour the mixture into a large bowl then add vanilla extract, MCT oil, and your favorite flavor (if you have any) and mix until it becomes smooth.
- You can form your ice cream however you want. Then freeze it for 5-6 hours
If you have an ice cream maker
- Transfer the mixture into your ice cream maker and chur.
- You can serve it immediately or it's better to freeze it before.
